No Taco Bell for me.
I resisted by simply taking the highway home and thus skipping driving past all Taco Bells. Of course, traffic sucked but you can't have everything.Instead I ate some burrito pie
and then made sweet potato fries (in the oven)
Luckily, a whole sweet potato is only about 150 calories because I eat the whole thing. Usually before it cools and I swear because it burns my tongue. This fuckers are like CRACK.
I guess I should try butternut squash fries too - they're supposed to be tasty and I'm all for new ways to eat veggies that don't make me want to yack.
Also, does anyone know if you can eat the skin on a sweet potato? Because making these fries would be even easier if I didn't have to peel the sweet potato first.
The only thing stopping me from making another one right now is the fact that I would have to go turn the oven on to 450F (which takes about 5 minutes to preheat) and then bake for about 15-20 minutes on one side and another 5 to 10 on the other side. That totals about 35 minutes and I actually want to put my still slightly ill self to bed!

When I roast sweet potatoes in the oven, the skins turn me off. Seems like they're tougher than regular potatoes. But I'm thinking a thin slice of skin might not be so bad. These look good! I love sweet potatoes in the over. In fact, I love all of my veggies roasted in the oven--so much more flavor than all other versions.
Whoa! Those fries actually look GREAT! BTW, I ate Taco Bell the other day (almost never do that) and totally thought of you, my dear Kelly. Heh.
Those sweet potato fries look SO good. I think I will make some myself.... thanks for writing out the directions, because I wouldn't have had the slightest idea how to cook them!!

@KameraSutra - Mmmmm. Taco Bell! Luckily the cravings aren't as bad today! The fries are great though!
@DeliaD - Those are the directions from the back of a Trader Joe's bag of pre-cut, pre-peeled sweet potatoes (that's what I buy when I'm LAAAAAZY). I recommend using olive oil spray on the aluminum foil and then a spritz over the potato pieces and then salt and pepper them. I've heard of using paprika on them but I've not yet tried that!
Every vegetable I eat. Whole green beans. Potatoes (both sweet and white), carrots, and onions are one dish. Broc, carrots, onion. Zucchini, yellow squash, and onion. All of 'em with onion and whole cloves of garlic tossed with a couple tablespoons of olive oil. Mmm.
Oh duh. I forgot that you baked those things... They do look good, but I think you're right. They'd be amazing sliced thinner and evenly.
