On Sunday I made delicious food: Proscuitto wrapped chicken breast broiled with fresh snapped green beans that I tossed with some olive oil and minced red onions.
Yesterday I had delicious food again: I went to Pita Jungle and had hummus and other deliciously tasty mediterranean-esque foods.
Working out is going acceptable - the Shred isn't happening every night like I'd hoped but otherwise, things could be waaaaaat worse. I just finished day 3 of week 2 of the 100 Pushup Challenge which was doing (over 5 sets) 74 pushups! I'm rocking the pushups. And my form is improving, greatly! Friday we take the second "test" to see how many pushups in a row we can do (Hubby did 80 pushups to my 74). I'm hoping to make it to 30 pushups this time. We'll see! That would be doubling my 15 pushups from the initial test.
The Couch to 5k challenge is going well also - I do day 3 of week 2 tomorrow - 90 seconds jogging followed by 2 minutes of walking over 20 minutes. I'm not sure what week 3 will bring - but I know I managed to (in 25 total minutes on the treadmill) to go 1.78 miles on Tuesday. That is more than halfway to a 5k!
I'm actually looking forward to this weekend! I've got yoga and C25K on Saturday morning followed by Ethiopian food with my good friend Jade. I like Ethiopian - it's full of lots of beans and food that I have NO clue what it is but I like! I'm also getting my first coop produce basket! This will be very exciting. It's a basket full of produce that supposed to be for 4 people for 1 week - hopefully it will be enough to get me through a full week - given that my typical produce consumption has been sitting around 8 to 10 pounds each week just for me. It is supposedly all locally grown and purchased - and with delivery fees, it will be $18.50. I have to pick it up about 3 miles from my house but it shouldn't be hard to find. I'm really excited about it. Jade (the good friend I'm having lunch with on Saturday) recommended it to me - she got one last Saturday and has been having fun playing with fresh produce all week. She made creamed corn with chives from scratch! Isn't that awesome? I'm thinking that epicurious.com and I are going to be good friends when it comes to trying to figure out what to do with some of the produce. I did promise Jade the bananas though - I hate them and I don't even like them in my house. Stinky buggers!
